The Dottato fig, also called Ottato, is a variety of domestic fig. The Dottato fig from Cosenza is appreciated for its high characteristics: abundant, aromatic pulp with an almost honeyed taste, very small and few achenes, it ripens in August and is used for confectionery production or even simply freshly picked from the tree. The Dottato also appears in the writings of Pier Antonio Micheli and in the paintings of Bartolomeo Bimbi, both in the service of Cosimo III. For millennia, in the Mediterranean basin, mainly dried figs have been domesticated and considered by man as a food with tonic and preservative qualities. Over the centuries, in the province of Cosenza, they have become an important economic resource for farmers who have created a wide range of derivatives, today, protected by the designation of origin: "Fichi di Cosenza" DOP. With the typical elongated drop shape and golden color, dried figs have a higher yield than other varieties and are full, fleshy, pasty, soft, plastic, very white, highly sugary and easy to store. These peculiarities have been recognized with the DOP quality mark. The typicality can be traced back to the Crati Valley (CS), where a hilly environment with a temperate climate has created the conditions for optimal vegetation.
